Nov. 22 is officially Korea Kimchi Day in the state of California. The California State Assembly passed the measure in August 2021. The day is also a national holiday in Korea.
The date is significant since there are 11 main ingredients in the fermented dish and 22 health benefits including probiotics.
Kimchi, a staple food in Korean cuisine, is a traditional side dish of salted and fermented vegetables, such as napa cabbage and Korean radish, made with a widely varying selection of seasonings, including gochugaru, spring onions, garlic, ginger, and jeotgal, etc. It is also used in a variety of soups and stews.
It also said kimchi contains probiotics, calcium, and vitamins and boosts bodily immunity.
Kimjang, or the traditional culture and process of preparing kimchi inscribed in 2013 on the UNESCO Representative List of Intangible Cultural Heritage of Humanity.
